However, it wasn\u2019t until after <br \/>an accident in 2011 that he decided to change his life, selling his insurance <br \/>company stock and investing the proceeds in Alma, The International <br \/>School of Italian Culinary Arts.<\/p><p>In 2013, he graduated and started his professional career at a Michelin-<br \/>starred restaurant, Ca\u2019 Vittoria, in the chef\u2019s position. He then worked <br \/>his way up to the position of sous chef at Ristorante La Dacia in the province <br \/>of Verona, near the wonderful Lake Garda. \u00a0He moved to Thailand in 2016, <br \/>seeking a new cultural adventure, and worked in Bangkok for six years. <br \/>And it was during this big experience that he realised he adored Thailand <br \/>but yearned the island lifestyle running through his veins.<\/p><p>He completed a path by accepting the position of Italian Chef at Prego,<br \/>and begun a new one. Following the footsteps of his mentor and predecessor, <br \/>Chef Marco Boscaini, he wants to ensure that his diners\u2019 experience is top-<br \/>notch from the beginning till the
