Chef Marco Boscaini

Chef Marco, the creative genius behind the extraordinary
success of Prego, our Italian culinary haven, embarked on
his culinary journey at the tender age of seven. Assisting his
grandmother in crafting handmade pasta, he developed
an early and enduring passion for food.

In 1996, Thailand beckoned Chef Marco with an invitation
to share his profound knowledge of authentic Italian cuisine.
What began as a brief visit evolved into several years of culinary
exploration, leading to his integral role within the Amari family.

The pinnacle of his career at Amari came with the launch
of Prego Samui, our flagship restaurant adjacent to Amari
Koh Samui. Fast forward almost two decades, and Prego Samui
stands as a testament to Chef Marco’s culinary brilliance. From
its inception, the restaurant has consistently drawn in throngs
of visitors, offering a delectable taste of Italy in the heart
of Thailand.

Approaching his 56th year, Chef Marco contemplated retirement,
but destiny had other plans. Presented with the opportunity
to lead new Prego projects across Thailand, starting with Bangkok, he eagerly embraced the challenge. Chef Marco’s passion and expertise continue to inspire, leaving an indelible mark on the world of Italian cuisine through Prego.

CULINARY GENIUS

Chef Giampiero Quartararo

Better known as Chef Piero, was born on the significant Mediterranean
island of Sicily, a region with a strong sense of identity and rich of influences
from Spain, France, and North Africa.

He has had a passion for cooking since he was a child and has assisted his
mother and grandmother with everything. However, it wasn’t until after
an accident in 2011 that he decided to change his life, selling his insurance
company stock and investing the proceeds in Alma, The International
School of Italian Culinary Arts.

In 2013, he graduated and started his professional career at a Michelin-
starred restaurant, Ca’ Vittoria, in the chef’s position. He then worked
his way up to the position of sous chef at Ristorante La Dacia in the province
of Verona, near the wonderful Lake Garda.  He moved to Thailand in 2016,
seeking a new cultural adventure, and worked in Bangkok for six years.
And it was during this big experience that he realised he adored Thailand
but yearned the island lifestyle running through his veins.

He completed a path by accepting the position of Italian Chef at Prego,
and begun a new one. Following the footsteps of his mentor and predecessor,
Chef Marco Boscaini, he wants to ensure that his diners’ experience is top-
notch from the beginning till the end.

CULINARY GENIUS

Chef Marco Giannoni

Chef Marco, raised in his family’s restaurant on 
Elba Island, Tuscany, developed a deep passion for Italian cuisine
from a young age. After refining his skills in various Tuscan
restaurants and cooking on luxury yachts for VIPs across Europe,
he fell in love with Thailand and eventually settled in Phuket.

Marco specializes in traditional dishes like “Stoccafisso alla Riese”
and “Porchetta,” utilizing techniques such as sous vide to enhance
flavors. Inspired by culinary legend Gualtiero Marchesi, Marco
is dedicated to creating innovative dishes that pair perfectly with
fine Tuscan wines, emphasizing authenticity and quality in
his cooking.
